The King of the jasmine teas. Only the finest, young green leaves are harvested by hand and then aromatised with fresh jasmine flowers for a number of days. Finally, the leaves are elaborately rolled by hand into delicate beads which produce a wonderful golden yellow colour when brewed. This tea will have you dreaming of a magnificent sea of spring flowers.

Tea amount: Use 2–3 g of tea leaves per 200–250 ml (1 cup) of water — about 1 teaspoon. Water temperature: Heat water to 80–85 °C (175–185 °F). Do not use boiling water, or the delicate leaves may become bitter. Steeping time: Pour hot water over the leaves and steep for 3–5 minutes. Serving: Strain the leaves and enjoy. Can be served plain, or with a touch of honey or lemon if desired.
